Makes servings for 8. Prep time: 5 minutes

1 Can condensed Chicken broth
1 Jar(18oz.) apricot preserves
1 Onion, chopped
2 tablespoons dry mustard or Dijon
1 (3.5 to 4 lb.) boneless pork loin roast

Mix broth, preserves, onion and mustard, cut the pork loin roast
to fit in the Slow Cooker.
Cook in Slow Cooker (Crock Pot), covered until done:
8 to 9 hours on low, or 4 to 5 hours on high

Tip: For a thicker sauce, mix together 2 tablespoons cornstarch and 2 tablespoons cool water in a glass. Remove pork from slow cooker, stir in the glass of cornstarch and water to broth mixture. Cover and cook on high for 10 minutes or until it thickens.
